Choosing a frying pan: hob and technique decide the material

Not every pan material works on every hob, and not every one takes high heat. Those two facts rule out most of the range before coatings enter the conversation. Edwin is an AI advisor and asks for them first.

  • Induction needs a magnetic base — plain aluminium or copper without a disc will not work on it.
  • Coated pans are built for gentle frying. Very high heat shortens their life considerably.
  • Stainless steel and cast iron take high temperatures and oven time, but ask for more fat and a little technique.
  • The diameter should match the cooking zone: an oversized pan on a small ring heats only in the middle.

Coated or stainless steel?

Coated for eggs, fish and anything that sticks easily. Stainless or cast iron for browning and high heat. Most kitchens need both rather than one of them.

How long does a coating last?

Almost entirely down to treatment: high heat, metal utensils and the dishwasher cost lifespan. Treated gently it lasts considerably longer than treated roughly.

Where do the prices come from?

From merchant feeds, updated daily. Without a feed price for your market, none is shown.
